3–4 whole jalapeños

¼ cup diced onion

2 tbsp oil

2 cups chicken broth

1 cup water

½ cup tomato sauce

½ tsp garlic powder

½ tsp cumin

Salt to taste

Instructions

  1. Rinse rice until water runs clear.
  2. Heat oil in a skillet and sauté rice until lightly golden.
  3. Add onion, bell pepper, garlic powder, and cumin; cook 1–2 minutes.
  4. Stir in tomato sauce, broth, and water.
  5. Nestle whole jalapeños on top.
  6. Cover and simmer on low for 20–25 minutes or until rice is tender.
  7. Fluff with a fork and serve with your BBQ spread.
