Ingredients

1 strip steak

Salt & pepper

1 tbsp olive oil

1 tbsp butter

3 eggs

Chili oil or paprika (optional)

Parsley for garnish

Chimichurri

½ cup fresh parsley, minced

2 tbsp fresh cilantro (optional)

3 garlic cloves, minced

½ cup olive oil

2 tbsp red wine vinegar

½ tsp red pepper flakes

Salt & pepper to taste

Instructions

Season steak with salt and pepper.

Heat a skillet with oil and sear steak 3–5 minutes per side until desired doneness. Add butter and baste.

Let steak rest.

Fry eggs in the same skillet until edges are crispy and yolks stay runny.

Mix chimichurri ingredients in a bowl.

Serve steak with fried eggs and a spoonful of chimichurri.
