Ingredients

For the Biscuits:

• 2 cups all-purpose flour

• 1 tbsp baking powder

• ½ tsp salt

• ¼ cup granulated sugar

• ½ cup (1 stick) cold butter, cubed

• ¾ cup buttermilk (or milk with 1 tsp vinegar)

• 1 tsp vanilla extract

• 1 cup fresh or frozen blueberries

For the Glaze (Optional):

• 1 cup powdered sugar

• 2 tbsp milk

• ½ tsp vanilla extract

Instructions

1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.

3. Add the cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture looks like coarse crumbs.

4. Stir in the buttermilk and vanilla extract until just combined (do not overmix).

5. Gently fold in the blueberries, being careful not to crush them.

6. Transfer the dough onto a floured surface and gently pat it into a rectangle about 1-inch thick.

7. Use a biscuit cutter or knife to cut out biscuits and place them on the prepared baking sheet.

8. Bake for 14–16 minutes, or until the biscuits are golden brown on top.

9. While the biscuits are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla in a small bowl.

10. Once the biscuits are out of the oven, let them cool slightly before drizzling with the glaze.

11. Serve warm and enjoy!

Notes

Use frozen blueberries if fresh ones aren’t available—just don’t thaw them before adding to the dough.

For extra buttery flavor, brush the tops with melted butter after baking.

Make them even sweeter by adding a sprinkle of coarse sugar on top before baking.

Serve with honey, jam, or clotted cream for an extra treat!
