Ingredients
1 pound ground beef
1 packet taco seasoning
½ cup water
1 cup refried beans
4 large flour tortillas
1 cup red enchilada sauce (mild)
1½ cups shredded cheddar or Mexican-blend cheese
¼ cup finely diced onion
Sliced black olives for topping
Instructions
In a skillet over medium heat, cook the ground beef until fully browned. Drain excess fat. Add taco seasoning and water, simmering until thickened.
Warm the refried beans in a small saucepan or microwave until smooth and spreadable.
Lay out a tortilla and spread a layer of refried beans down the center. Top with seasoned beef and a sprinkle of diced onion.
