Ingredients:

• 2 cups raw potatoes, grated

• 1 cup mashed potatoes (leftover or freshly made)

• 1 ½ cups all-purpose flour

• 1 teaspoon baking soda

• 1 teaspoon salt

• ¾ to 1 cup buttermilk

• 1 tablespoon butter (for frying)

• 1 tablespoon vegetable oil (for frying)

Instructions:

1. Prepare the Potatoes:

• Peel and grate the raw potatoes, then place them in a clean kitchen towel and squeeze out excess moisture.

• In a large mixing bowl, combine the grated raw potatoes with the mashed potatoes.

2. Mix the Batter:

• In a separate bowl, whisk together the flour, baking soda, and salt.

• Gradually add the dry ingredients to the potato mixture, stirring to combine.

• Slowly pour in the buttermilk, mixing until you achieve a thick batter consistency.

3. Cook the Boxty:

• Heat butter and oil in a large skillet over medium heat.

• Drop spoonfuls of batter into the pan, pressing gently to flatten each into a pancake shape.

• Cook for about 3-4 minutes per side, until golden brown and crispy.

4. Serve & Enjoy:

• Transfer the cooked boxty to a plate lined with paper towels.

• Serve warm with sour cream, smoked salmon, crispy bacon, or your favorite toppings.
