There’s nothing worse than coming home from a long day at work to find that your pantry and fridge are so near empty, they practically echo… especially when your tummy is grumbling and you’ve got a serious case of the hangry. Luckily, there’s little need to grumble. You can throw together some pretty awesome dinners with minimal ingredients, and these delectable dinner recipes call for just four.

Ever have one of those days when you look in your refrigerator and pantry and wish dinner would magically appear from the random things left in there? I have good news. There are a lot of recipes out there that are simply delicious…but only take a few ingredients to make! This is great for those overdue grocery shopping days, for keeping the food budget intact, or for busy people of all kinds who just don’t have a lot of time to fuss around in the kitchen on weeknights.

You’ll Need:

8 chicken thighs (you can use the whole chicken or other parts).
1 package of dry french onion soup mix.
1 (8 oz) bottle of Russian dressing.
1 small jar of apricot preserves.

How to:

In a bowl, mix together the dry onion soup mix, the russian dressing and the apricot preserves.
In a baking pan, arrange the chicken pieces, season with pepper then pour the sauce over the chicken and coat.
In a preheated oven to 400°, roast the chicken for 1 hour to 1 hour and 15 minutes depending on the chicken.
Baste many times during cooking.
