MEXICORN ROTEL DIP

I added black eyed peas and let it sit for at least 20 minutes after mixing to let all the flavors meld. Works great as an appetizer or side dish. You can dip chips, assorted fresh veggies, pita chips, or really whatever you’d like into this yummy recipe for Cowboy Caviar. Easy to make and filled with the zesty flavors of Mexicorn, Rotel tomatoes, shredded cheddar cheese, and fresh green onions, this recipe is the perfect tip for any party.

Ingredients

2 cans Mexicorn
1 can Rotel (Mild or Hot)
2 cups shredded Cheddar
4-6 green onions – sliced
1 cup Mayo of your choice
8 ounces sour cream
1/2 bunch cilantro shredded up (you can add more if you love cilantro)

Cooking Instructions

Mix all ingredients in a bowl and serve it up! Enjoy, it’s addicting!! 😬
