Amish Cinnamon Bread

Ingredients:

For the Batter:

• 2 cups all-purpose flour

• 1 cup granulated sugar

• 1 teaspoon baking soda

• 1/2 teaspoon salt

• 1 teaspoon baking powder

• 1 teaspoon cinnamon

• 1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar, let sit for 5 minutes)

• 1/2 cup vegetable oil

• 2 eggs

• 1 teaspoon vanilla extract

For the Cinnamon Sugar Swirl:

• 1/3 cup granulated sugar

• 1 teaspoon cinnamon

Instructions:

1. Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

2. Prepare the Batter:

In a large mixing bowl, whisk together flour, sugar, baking soda, salt, baking powder, and cinnamon.

In a separate bowl, mix the buttermilk, oil, eggs, and vanilla extract.

Slowly combine the wet ingredients with the dry ingredients and stir until smooth.

3. Layer the Batter:

Pour half of the batter into the greased loaf pan.

In a small bowl, mix the 1/3 cup sugar and 1 teaspoon cinnamon for the swirl. Sprinkle half of this mixture over the batter.

Add the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture.

4. Swirl & Bake:

Use a knife to gently swirl the cinnamon-sugar mixture into the batter.

Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

5. Cool & Serve:

Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
