In a large bowl, combine ground chicken, mozzarella, Parmesan, eggs, and minced garlic.
Add flour, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
Cover and refrigerate for 30 minutes (optional but recommended).
Heat vegetable oil in a large skillet over medium heat.
Using an ice cream scoop or 1/4 cup measure, portion the mixture into the hot pan.
Flatten each portion slightly with the back of a spatula.
Cook for 4-5 minutes on each side until golden brown and cooked through.
Transfer to paper towel-lined plate to drain excess oil.
Repeat with remaining mixture, adding more oil as needed.
Serve hot with your favorite dipping sauce.
Notes:
Ensure mixture is well-chilled for easier handling
Don’t overcrowd the pan while frying
Test oil temperature with a small amount of mixture first
Internal temperature should reach 165°F
Pat chicken dry if using minced chicken breast
Can substitute different cheese varieties
Add finely diced vegetables for extra nutrition
Don’t make fritters too thick or they won’t cook through
Keep finished fritters warm in a 200°F oven while cooking remaining batches
