Cheesy Chicken Fritters

Equipment:

  • Large mixing bowl
  • Box grater
  • Measuring cups and spoons
  • Large skillet or frying pan
  • Paper towels
  • Plate lined with paper towels
  • Ice cream scoop or 1/4 cup measure
  • Spatula
  • Meat thermometer (optional)
  • Food processor (optional)

Ingredients:

  • 1 pound ground chicken (or finely minced chicken breast)
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil for frying
  • Optional: 1/4 cup green onions, finely chopped

Instructions:

  1. In a large bowl, combine ground chicken, mozzarella, Parmesan, eggs, and minced garlic.
  2. Add flour, parsley, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Cover and refrigerate for 30 minutes (optional but recommended).
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Using an ice cream scoop or 1/4 cup measure, portion the mixture into the hot pan.
  6. Flatten each portion slightly with the back of a spatula.
  7. Cook for 4-5 minutes on each side until golden brown and cooked through.
  8. Transfer to paper towel-lined plate to drain excess oil.
  9. Repeat with remaining mixture, adding more oil as needed.
  10. Serve hot with your favorite dipping sauce.

Notes:

  • Ensure mixture is well-chilled for easier handling
  • Don’t overcrowd the pan while frying
  • Test oil temperature with a small amount of mixture first
  • Internal temperature should reach 165°F
  • Pat chicken dry if using minced chicken breast
  • Can substitute different cheese varieties
  • Add finely diced vegetables for extra nutrition
  • Don’t make fritters too thick or they won’t cook through
  • Keep finished fritters warm in a 200°F oven while cooking remaining batches
  • Serve with marinara sauce, ranch dressing, or garlic aioli
