Ingredients
½ cup (1 stick) unsalted butter, melted
1 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
½ teaspoon baking powder

1½ cups sweetened shredded coconut
Directions
Preheat oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper. In a mixing bowl, whisk together melted butter and brown sugar until smooth. Add eggs and vanilla extract, mixing well to combine. In a separate bowl, whisk together flour, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture until just combined. Fold in shredded coconut. Spread the batter evenly into the prepared pan. Bake for 22–25 minutes or until the top is golden brown and a toothpick inserted in the center comes out with moist crumbs. Let cool completely before cutting into bars.
