Chinese Pepper Steak with Onion

Serve over a bed of rice along side a salad and dinner is done. In fact, we make our rice in the Instant pot, so this dinner was crazy easy using my two favorite appliances.

Chinese Pepper Steak with Onion
Ingredients:

3 lbs flank steak, thinly sliced
4 cups broccoli, chopped
½ cup mini red peppers, sliced
1 onion, thinly sliced
2 cups fresh snow peas
Green onions, sliced for garnish
Sauce:

2 tbsp garlic, minced
½ cup soy sauce
2 tbsp sesame oil
1 cup beef broth
⅓ cup brown sugar
3 tbsp cornstarch
Side:

Steamed basmati rice
Instructions:

Prepare the Sauce:

In a small bowl, whisk together the garlic, soy sauce, sesame oil, beef broth, and brown sugar.
Cook the Beef:

Add the sliced flank steak to the Instant Pot.
Pour the sauce mixture over the steak.
Pressure Cooking:

Close the Instant Pot lid and seal.
Cook on manual (high pressure) for 10 minutes.
Let the pressure release naturally for 10 minutes, then do a quick release.
Thicken the Sauce:

Remove the beef from the Instant Pot and set aside.
Turn off the Instant Pot, then turn it back on to sauté mode.
Whisk in the cornstarch and stir until the sauce thickens.
Combine and Heat Through:

Add the beef back into the pot and stir to coat with the thickened sauce.
Stir in the steamed broccoli, mini red peppers, and snow peas. Cook for a few minutes until the vegetables are tender.
Serve:

Serve the pepper steak mixture over steamed basmati rice.
Garnish with sliced green onions.
