Crockpot Ham, Green Beans and Potatoes

Use smoked ham for the most flavor, and make sure your green beans are trimmed. Cut potatoes into even pieces to ensure they cook at the same rate. Don’t lift the lid while cooking, as it slows down the process and affects the texture.

Ingredients

1 1/2 pounds ham, diced or cut into chunks

1 1/2 pounds fresh green beans, trimmed

1 1/2 pounds baby potatoes, halved (or use red or Yukon gold)

1 small onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

Directions

Add the diced ham, green beans, potatoes, onion, and garlic to the slow cooker.

Pour in the chicken broth and season with salt, pepper, and smoked paprika if using. Stir gently to combine.

Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until potatoes are fork-tender and flavors are well blended.

Taste and adjust seasoning if needed. Serve warm and enjoy.

For variations, you can add chopped carrots or corn for extra color and sweetness. If using canned green beans, reduce cooking time and add them in the last hour to avoid overcooking. A splash of apple cider vinegar at the end brightens up the flavor. Leftover ham bone can also be used for a richer broth.
