Granny Cake

My mother has been making this cake for 30 years. It takes minimal time to prepare and is so very moist!

Also known as hummingbird cake, this old-fashioned dessert made with bananas, pineapple, and pecans make this a moist, crunchy birthday cake favorite.

We love all of the cakes our grandmother made for us, but if we had to (haaaad to) choose favorites, this one, lovingly referred to simply as “Granny Cake,” would be our top choice. It always turns out perfectly (it’s never, ever dry) and has tons of great flavor and texture that keeps it interesting and keeps everyone else coming back for more. This cake sort of has a coffee-cake-look about it, but it’s so much more than that, trust us….

My mom always makes pineapple upside-down cake from scratch for birthdays with the white cake and then the sugar and pineapple rings on top. This cake tastes very similar, but it is so much easier. The only thing missing was the maraschino cherries. My parents, my sister, and I really enjoyed it late one night, while it was fresh from the oven. I’m sure it would be great with ice cream or whipped cream on top too…
