GRILLED CHEESE BUFFALO CHICKEN

Grilled cheese sandwiches are probably one of the easiest, most classic sandwich recipes ever invented. Taking a photo of one is sometimes another story. Two of life’s most delicious foods are combined into one perfect sandwich with this Buffalo Chicken Grilled Cheese. With a creamy blue cheese spread and plenty of spicy chicken and sharp cheddar cheese, you’ll be craving this sandwich for both lunch and dinner!   I know some people get their undies in a bundle when people put things other than cheese in grilled cheese sandwiches and still call it a grilled cheese sandwich.  Lucky for you, I’m not one of those people.  Two of life’s most delicious foods are combined into one perfect sandwich with this Buffalo Chicken Grilled Cheese. With a creamy blue cheese spread and plenty of spicy chicken and sharp cheddar cheese, you’ll be craving this sandwich for both lunch and dinner! 

And although the origins of the original Buffalo sauce are still being debated, this version takes both accounts into consideration by creating a mashup of the two. It’s rich, spicy, and tangy and is the perfect sauce for practically anything.

Ingredients

1 lbs. boneless chicken breast
black pepper
¼ cup mozzarella cheese, shredded,divided
1 tsp. butter
¼ cup Hot Sauce
¼ tsp. celery salt.

Directions:
Preheat grill to medium low heat
Butter fly your chicken, by cutting it horizontally. Do not cut all the way through. Sprinkle the inside of the chicken with pepper. Evenly top the the chicken with cheese and fold over the chicken to close it. It should look like the chicken breast before you cut it.
In a microwave safe bowl melt the butter for 8 seconds. Stir in hot sauce and celery salt.
Brush one side of the chicken with hot sauce mixture and place the hot sauce size down on the grill. Brush more hot sauce over top of chicken. Cook for about 7 minutes. Flip the chicken and brush on remaining hot sauce and cook until no longer pink; about 5 minutes more.
