Macaroni and Tomatoes Old Fashioned Recipe

Simple Macaroni and Tomatoes is a classic dish many folks remember from their childhoods. And while there are tons of variations, the basic recipe pretty much stays the same.
With this, three ingredients are a must in my book – canned tomatoes, macaroni, and bacon grease. Canned tomatoes make it easy and perfect as a year-round dish. And I actually prefer the flavor of the canned variety in this one. Macaroni is obvious. And the bacon grease, while it can be replaced with butter, is required for me because it gives the dish it’s signature savory, smoky flavor.

This is another sinple, easy and filling side dish. My sweet mother in law fixed this for the grand kids, each time we spent the day on the farm. It is one of our favorites. You can also the following day, add hamburger to it to stretch this into a meal. Can be used to make a Goulash.
I grew up on this side dish of Macaroni and Tomatoes. My mother was a country cook and knew how to make a dish that was cheap, easy and good! If you like tomatoes and pasta, you will love this. Just add fried cornbread and you got some good food. This is a very easy recipe.

Ingredients:

1 cup uncooked elbow macaroni
2 cups water
1 teaspoon salt or to taste
1 (15 oz.) can diced tomatoes, undrained
2 cups tomatoes juice
1 teaspoon bacon drippings
1 tablespoons butter
2 teaspoons sugar
black pepper to taste

Directions:

Place the macaroni in 2 cups salted boiling water and cook until the pasta is just starting to soften. Add the tomatoes, Tomatoes juice, bacon drippings, butter, sugar and black pepper to taste. Cook just until the pasta is done and has absorbed some of the juices. Don’t leave the bacon drippings out, that is one of the keys to the flavor!

You can add cheese to this or sprinkle with Parmesan, but this is one dish I don’t like to add cheese to! I know it’s hard to believe, but it’s true! I love this with cornbread..
