Oatmeal Cinnamon Chocolate Chip Bars

OATMEAL CINNAMON CHOCOLATE CHIP BARS – I LOVED THESE BARS! DID YOU NOTICE I SAID “LOVED” AS IN… THEY’RE ALREADY GONE? UH HUH, THAT 9 INCH PAN OF BARS DIDN’T LAST LONG HERE.
Weekends are my weakness when it comes to sweets. I usually go for cookies or bars of some sort because I can always count on having the ingredients on hand.

These Oatmeal Chocolate Chip Cookie Bars are a regular, sweet-tooth-satisfying weekend treat at our house!. Chewy, chocolate and oat goodness in every single bite!

Guys I have been upping my work out game. And . . . can I be real with you for a second? It is KILLING ME. I like to think that I’m good at simple things like, say, standing up, or you know? Wakling. But . . . Ummm, after increasing my work outs and adding in ridiculous nonsense like side planks and squat jump things that make want to die, I’m questioning those things.

These oatmeal cookie bars are a heartier, chewier version of my chocolate chip cookie bars! Buttery, thick, chewy, and chock full of oats and (optional) chocolate pieces, these are easy to make with no mixer required!

Ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/4 Teaspoon salt
  • 2 Teaspoon cinnamon
  • 1 Teaspoon nutmeg
  • 2 eggs beaten slightly
  • 1 Teaspoon vanilla
  • 1 stick butter melted
  • 2 cups apples peeled,cored ,chopped
  • 1/2 cup chopped pecans
  • 1 Tablespoon butter.

 

Instructions:

 

  1. Preheat oven to 350 degrees, place an 8 or 9 inch cast iron skillet in the oven to preheat. You can also use an 8 or 9 inch baking dish.
  2. Whisk the flour,both sugars,salt,cinnamon and nutmeg together in a large bowl.
  3. In a medium bowl whisk the eggs, vanilla and melted butter together.
  4. Place the chopped apples and pecans in the flour mixture, toss to coat.
  5. Stir the egg mixture into the flour mixture until just combined. Mixture will be thick, stir until there’s no visible sign of flour that hasn’t been mixed in.
  6. Melt one Tablespoon butter in the hot skillet, swirl to coat the pan, you can also use a pastry brush to coat the bottom and sides of the pan with the melted butter.
  7. Place the pan back into the oven, bake 35- 40 minutes until the sides are dry and a toothpick inserted in the center comes out clean. Cool about 20 minutes, cut and serve warm.
