peanut butter and warm bananas

A sweet, warm breakfast idea. Cooked like a grilled cheese, but filled with melted peanut butter and warm bananas.
I made two different types of grilled sandwiches, one with chunky peanut butter and bananas and one with dark chocolate-peanut butter and bananas. I melted a bit of butter in the pan to cook the sandwiches in, which made it easier for me. The kids loved this combo and devoured the sandwiches. Will make this again, but I think next time I might try cream cheese and strawberry preserves, with sliced strawberries for myself.

A neighbor introduced me to this southern sweet and sour banana dish. It was quite a hit. I made a couple of improvements (to my tastebuds) and thought I should share it. Very quick and delicious after dinner treat or afternoon snack for the littlies. As an added bonus it also counts as a sensory activity where they can use their hands and feel the different temperatures and textures.

Ingredients :

cooking spray
2 tablespoons peanut butter
2 slices whole wheat bread
1 banana, sliced

Directions :

Heat a skillet or griddle over medium heat, and coat with cooking spray. Spread 1 tablespoon of peanut butter onto one side of each slice of bread. Place banana slices onto the peanut buttered side of one slice, top with the other slice and press together firmly. Fry the sandwich until golden brown on each side, about 2 minutes per side.
