Pecan Pie Muffins and Christmas Breakfast
I cooked Christmas breakfast this year, and one of the hits of the menu was these Pecan Pie Muffins. In fact, the menu was really designed around these Pecan Pie Muffins.

My mom loves Pecan Pie, and when I saw these easy to make delicious looking Pecan Pie Muffins over on MB Things I Know on Facebook (who found them on Shabby Chicks), I knew I had to make them.

Christmas breakfast was a big hit, both for my guests and for me. I made a nice easy menu, and I was able to prepare most everything in advance. Since I designed it all with my mom in mind, I know she would be a happy camper. And, I was right! So, here’s the menu, and a little further on, you’ll find the recipe for those yummy Pecan Pie Muffins.

Ingredients:
1 cup packed light brown sugar
½ cup all-purpose flour
2 cups chopped pecans
⅔ cup butter, softened
2 eggs, beaten

Instructions:
Preheat oven to 350 degrees F. Grease mini or regular muffin cups generously. Grease them well or they will stick. In medium bowl, stir together brown sugar, flour and pecans. In a separate bowl, beat the butter and eggs together. Stir in dry ingredients just until combined.
Spoon batter into muffin cups about ⅔ full. Bake for 12-13 minutes for mini muffins or 15-17 minutes for regular size muffins. Run a knife around the edge of each muffin and pop it out.
