Pepperoni Biscuit Bombs

 

We are getting ready for another camping adventure, visiting a new campground over in Gauley Bridge, WV, and I made up these biscuits to freeze so we can thaw and reheat them for breakfast as we pack up to come home later this week. I came up with this recipe when our Grandsons were visiting and they ate these up faster than a bolt of lightening. I have to admit, they are good and a quick breakfast to pull out of the freezer when your short on time. Now, I did use bisquick to make mine, but feel free to make your dough from scratch if you like.

The other night my husband and I got on the subject of party lines back in the day. Nannie Polly had one for years that they shared with my Uncle Marvin and Aunt Georgia. It suddenly dawned on me that party line was about as close to three way calling that Nannie ever got. They had a distinct ring to let you know if the call was for them or the other party, but Nannie would answer the phone regardless of the ring. She would just chime on in the conversation between Aunt Georgia and whoever had called. Nannie was known to pace as she talked on the phone, doing things and talking at the same time, and that ole black cord would get all tangled up around her by the time she was ready to hang up the phone. I can see her now, turning around and pulling at the phone cord, stepping over parts of it to get untangled from it. The cord reached from the back door to the kitchen sink, so it was pretty long. If that were me these days, I would have fallen and broke my fool neck trying to get out of the mess she would create with that phone cord while she carried on with who she was talking too.

Pepperoni Biscuit Bombs

3 C. buttermilk baking mix
1/2 tsp. garlic powder
1/4 tsp. italian seasoning
1 C. finely chopped pepperoni
1/2 C. finely chopped deli ham
1 C. shredded mozzarella cheese
1/2 C. shredded cheddar cheese
1 C. milk
3 T. butter, melted
1/4 tsp. garlic salt

In a bowl, combine the baking mix, garlic powder and italian seasoning. Stir in the pepperoni, ham, both cheeses and milk and combine well. Using a small ice cream scoop, scoop portions onto a lightly greased baking sheet. Bake in a 425 degree oven for 15-18 minutes, until golden. Combine the melted butter and garlic salt, brush the biscuits once out of the oven. Makes approx. 14 biscuits.
