Polish Sausage and Cabbage Soup Crock Pot

This Polish sausage soup is a fabulous mixture of browned kielbasa, onion, and cabbage, along with cubed potatoes and broth. Add some caraway seeds if you like, and tomatoes are also optional.

This is a rustic soup, and so easy to make and cook. The key to great flavor is the caramelization you will get from browning the sausage, onion, and cabbage prior to adding them to the slow cooker.

Cris here. Confession… I love cooked cabbage. It is by far one of my favorite sides. So, when I saw this Crock Pot Polish Sausage and Cabbage Soup in Gooseberry Patch’s Busy Day Slow Cooking I told Mikey we HAD to make it. And then, he made a face at me. He wasn’t exactly sold on the idea. But I didn’t really give him a choice! And so he made a video!

What type of sausage should I use?
You can use any type of sausage that you enjoy the taste of. Ham sausage, Farmer’s sausage or kielbasa, all that matters is that it’s a smoked sausage and not a raw sausage! This soup only works with smoked sausage.

This soup was inspired by a craving for cabbage and hot cozy soup (although it’s spring it’s still cold outside here). You’ll definitely need some crusty French bread to soak up the amazing broth… it’s just bursting with flavor!

Ingredients:
2 cups potatoes, cubed and peeled
4 cups cabbage, shredded it fine
1 carrot, shredded it fine
1 large onion, chopped
2 teaspoons caraway seeds, crushed (optional)
1-1/4 lb Polish sausage, cooked, halved lengthwise and cut into 1/2 inch slices
4 cups fat free chicken broth or you can just use water
black pepper and salt to taste

 

Directions:
Place potatoes, cabbage, carrot, onion, caraway seeds, sausage, pepper and salt in crock pot. Pour broth over all.Cover, cook on low for 10 – 12 hours or high for 5 – 6 hours.
