Slow Cooker Cheesy Bacon Ranch Potatoes!

Back from Hawaii and back to reality! It was the most amazing perfect vacation I have ever been on. More details to come on that next week since I am going to dedicate that week to recipes that I was inspired by while in Hawaii. Right before I left to Hawaii, I made these cheesy bacon ranch potatoes. Slow cooked all day to be the most delicious and flavorful potatoes that you will want to have as side to every meal!

It’s the part where you have to hold yourself back before you eat every single perfectly-textured potato chunk smothered in cheesy goodness and crisp bacon bits.

I am always on the lookout for easy side dishes and when I came across this one for slow cooker cheesy bacon ranch potatoes on damn delicious I knew that I had a winner! As soon as I see slow cooker in the name I pretty much know that it’s going to be nice and easy and throw in the words potatoes, ranch, cheese and bacon and you definitely have my interest! I especially like the fact that these potatoes are made in the slow cooker because for large dinners, like Thanksgiving dinners, there tends to be a lot of things that need oven time so doing some in the slow cooker is perfect! These potatoes could not be easier to make, I go weak in the knees over potatoes. From potato chips, to French fries, to homemade creamy mashed potatoes, to cheesy bacon ranch potatoes… I don’t care how they are made; potatoes are my favorite indulgence. In fact, if I had to choose between cake or a tasty potato side dish, potatoes would win every time. So why not throw together your favorite potato ingredients into a slow cooker and see what happens?

you simply dice the potatoes, toss the in a powdered ranch dressing mix, layer them into the slow cooker along with the cheese and bacon, cook all day and they are ready just in time for dinner! Ingredients:
6 slices bacon
3 pounds red potatoes, chopped
1 1/2 cups shredded cheddar cheese, divided
1 tablespoon Ranch Seasoning and Salad Dressing Mix
2 tablespoons chopped chives

Directions:
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil.
Spread bacon in a single layer onto the prepared baking sheet. Place into oven and bake until brown and crispy, about 12-14 minutes. Let cool before crumbling; set aside.
Line a slow cooker with aluminum foil, leaving enough to overhang to wrap the potatoes on top, and coat with nonstick spray. Place a layer of potatoes evenly into the slow cooker. Top with cheese, Ranch Seasoning and bacon, repeating 2 more times and reserving 1/2 cup cheese.
Cover potatoes with aluminum foil and cook on low heat for 7-8 hours or high heat for 3-4 hours. Sprinkle with remaining 1/2 cup cheese. Cover and cook until melted, about 1-2 minutes.
Serve immediately, garnished with chives.
