Slow Cooker Taco Soup

This was really good and filling. I love that it makes enough for me to freeze the leftovers. This batch will feed my family three times. 🙂 It definitely missed the mark for me. I’ve had good taco soups before and this one was super disappointing. Had with shredded cheese, sour cream, and avocado and still wasn’t great. Bummed because most of these ingredients could’ve been used for an awesome chili.

This slow cooker taco soup with ground beef is so easy — and SO GOOD! It’s perfect for busy weeks with flexible cooking times for any schedule. Serve with tortilla chips, cilantro-lime rice, or cornbread.
I suppose in the winter time I crave soups more than any other time of year. What’s not to love? They are warm and comforting and just beg to be eaten with a bit of bread. This is one of those soups that are fun to make and eat. You can really dress this soup up however you like.
