This Strawberry Glaze Cake is a delightful dessert that combines a soft, moist cake with a luscious strawberry glaze. Bursting with fresh strawberry flavor, this cake is perfect for spring and summer gatherings, birthdays, or just a sweet treat to brighten your day!

Ingredients

For the Cake:

• 2 ½ cups all-purpose flour

• 2 ½ tsp baking powder

• ½ tsp salt

• 1 cup unsalted butter, softened

• 1 ¾ cups granulated sugar

• 4 large eggs

• 1 tbsp vanilla extract

• 1 cup whole milk

• 1 ½ cups fresh strawberries, finely chopped

For the Strawberry Glaze:

• 1 cup fresh strawberries, mashed

• 1 ½ cups powdered sugar

• 2 tbsp milk (adjust for desired consistency)

• 1 tsp vanilla extract

Instructions

1. Preheat & Prep:

Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan (or two 9-inch round pans for a layered cake).

2. Mix the Dry Ingredients:

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. Cream Butter & Sugar:

In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

4. Combine Wet & Dry:

Alternately add the flour mixture and milk to the batter, beginning and ending with the flour mixture. Gently fold in the chopped strawberries.

5. Bake:

Pour the batter into the prepared pan(s) and bake for 30-35 minutes (round cakes) or 40-45 minutes (9×13-inch cake), until a toothpick inserted into the center comes out clean. Let the cake cool completely before glazing.

6. Make the Glaze:

In a bowl, whisk together mashed strawberries, powdered sugar, milk, and vanilla until smooth. Adjust the consistency by adding more milk if needed.

7. Glaze & Serve:

Pour the glaze over the cooled cake and spread evenly. Let it set before slicing. Enjoy! 🍓✨

This cake is sweet, fruity, and absolutely irresistible! Perfect for any occasion. 🎂💕
