Tasty Lentil Tacos

Quick and Easy Lentil Tacos are one of my family’s favorite plant-based dinners. These healthy tacos are a fail-proof dinner delight! Vegan and vegetarian tacos are so simple, and perfect if you have busy weeknights!

Tacos are one of those meals that are always bouncing around the menu plan for a few reasons. They are simple to prepare and make it to the table quickly, you normally have everything on hand to make them, and everyone likes being able to top a taco with what they like best. Today’s recipe for lentil tacos is thinking outside the beef box a bit, but with all of the quick/easy/deliciousness that you love about tacos.

Ingredients
1 teaspoon canola oil
⅔ cup finely chopped onion
1 small clove garlic, minced
⅔ cup dried lentils, rinsed
1 tablespoon taco seasoning, or to taste
1 ⅔ cups chicken broth
⅔ cup salsa
12 large (6-1/2″ dia)s taco shells

Directions
Step 1
Heat oil in a skillet over medium heat; cook and stir onion and garlic until tender, about 5 minutes. Mix lentils and taco seasoning into onion mixture; cook and stir for 1 minute.
Step 2
Pour chicken broth into skillet and bring to a boil. Reduce heat to low, cover the skillet, and simmer until lentils are tender, 25 to 30 minutes.
Step 3
Uncover the skillet and cook until mixture is slightly thickened, 6 to 8 minutes. Mash lentils slightly; stir in salsa.
Step 4
Serve about 1/4 cup lentil mixture in each taco shell
