Weight Watchers Broccoli Salad

[irp]This lightened up Broccoli Salad is the perfect answer to that “what should I bring?” question that comes up for cookouts and parties all summer long. It’s hearty and crunchy with broccoli, carrots and sunflower seeds, smoky from the crispy chopped bacon, fruity with red grapes and apples and all tossed in a sweet and creamy sauce. Plus a generous serving is just 140 calories or 4 Weight Watchers SmartPoints! I laid out the recipe below to serve 6 so that it would work well for those who are making it for lunches or for a side dish at home, but you can easily double or triple the recipe to bring to a party – it’s sure to be a crowd-pleaser!

I didn’t think I was a fan of broccoli salads. Most of them start out light and healthy but then get weighed down with heavy dressings and tons of bacon. But this light and crunchy skinny broccoli salad recipe has changed my mind.

The salad is great as-is, but feel free to make it your own by adding some lightly toasted slivered almonds or a sprinkling of bacon. You’re going to love it!

 

 INGREDIENTS

4 cups small broccoli florets (about 1 1/2 pounds)
1 1/2 cups seedless green grapes, halved
1 cup chopped celery
1 cup raisins
1/4 cup salted sunflower seed kernels
1/3 cup light mayonnaise
1/4 cup plain fat-free yogurt
3 tablespoons sugar
1 tablespoon white vinegar
