Beef Quesadillas Recipe

Crispy, cheesy beef quesadillas packed with seasoned ground beef, melted cheese, and optional spicy additions. Ingredients
  

  • For Beef Filling
  • 1 pound ground beef 80/20 lean
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste
  • For Quesadillas
  • 8 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 2 tablespoons vegetable oil
  • Optional: Chopped cilantro

Instructions
 

  • Brown Ground Beef
  • Heat skillet over medium-high heat
  • Add ground beef, breaking into small pieces
  • Cook until no pink remains (8-10 minutes)
  • Drain excess fat if needed
  • Season Beef
  • Add diced onions, garlic
  • Stir in taco seasoning
  • Cook for additional 2-3 minutes
  • Remove beef mixture from pan
  • Assemble Quesadillas
  • Wipe skillet clean
  • Place tortilla in skillet
  • Sprinkle cheese on half of tortilla
  • Add beef mixture
  • Fold tortilla in half
  • Cook 2-3 minutes per side until golden
  • Serve
  • Cut into wedges
  • Plate and serve immediately

Notes

Can substitute ground turkey for beef
Add jalapeños for extra heat
Serve with salsa, sour cream, guacamole
Refrigerate leftovers for 3-4 days
Freezer-friendly: Wrap individually before freezing
