Strawberry Cream Cheese Loaf

Ingredients
  

  • For the Loaf
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries diced
  • For the Glaze Optional
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • 1/2 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line loaf pan with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large mixing bowl, cream together softened cream cheese, butter, and sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  • Gradually incorporate dry ingredients into wet mixture, mixing until just combined.
  • Gently fold in diced strawberries, being careful not to overmix.
  • Pour batter into prepared loaf pan, smoothing the top with a spatula.
  • Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow loaf to cool in pan for 15 minutes, then transfer to a cooling rack.
  • Optional: Once cooled, prepare glaze by mixing powdered sugar, milk, and vanilla. Drizzle over loaf.
